  • 3 cans tuna (wild-caught Albacore or Yellowfin)
  • 2 1/2 celery stalks, chopped
  • 1/2 English cucumber, chopped
  • 45 radishes, chopped
  • 3 green onions, chopped
  • 1/2 medium red onion, finely chopped
  • 1/2 cup pitted Kalamata olives
  • Fresh parsley and mint
  • 2 1/2 teaspoons good quality Dijon mustard
  • Zest of 1 lime
  • Juice of 1 1/2 limes
  • 1/3 cup extra virgin olive oil
  • 1/2 teaspoon sumac
  • Pinch of kosher salt and black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional)

Instructions

  1. In a small bowl, whisk together Dijon mustard, lime zest and juice until smooth. Gradually add olive oil and mix well. Stir in sumac, salt, pepper, and crushed red pepper flakes if desired.
  2. In a large mixing bowl, drain the tuna and add all the vegetables and herbs. Gently combine with a wooden spoon.
  3. Pour the dressing over the mixture and toss until evenly coated.
  4. Chill for at least 30 minutes before serving to enhance flavors.
