  • 1 cup uncooked quinoa
  • 1 can (15 ounces) chickpeas
  • 1 medium red onion
  • 1 medium yellow bell pepper
  • 1 medium cucumber
  • 1 cup cherry tomatoes
  • 1/2 cup kalamata olives
  • 2 tbsp extra-virgin olive oil
  • Juice of 1 large lemon
  • 2 tbsp apple cider vinegar
  • Salt and Pepper to taste
  • 1/2 cup basil leaves

Instructions

  1. Rinse quinoa under cold water in a fine-mesh colander.
  2. In a saucepan, combine rinsed quinoa and 2 cups water with salt. Bring to a boil, then simmer for 15 minutes until water is absorbed. Let rest covered for 5 minutes.
  3. Chop red onion, cucumber, yellow bell pepper; halve cherry tomatoes and olives.
  4. In a bowl, whisk together lemon juice, olive oil, apple cider vinegar, salt, pepper, and chopped basil.
  5. In a serving bowl, combine cooked quinoa with chickpeas and chopped vegetables. Drizzle dressing over the top and mix thoroughly. Allow to rest before serving.
