  • 3 medium russet potatoes
  • 12 tablespoons olive oil
  • 2 tablespoons butter (softened)
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup sour cream
  • 2 slices bacon (cooked and crumbled)
  • Garlic powder
  • Onion powder
  • Kosher salt
  • Black pepper

Instructions

  1. Wash and dry the potatoes. Brush with olive oil and sprinkle with salt. Poke holes in each potato.
  2. Preheat the air fryer to 400°F (204°C). Cook the potatoes for 30 minutes, flipping halfway through.
  3. Let cool, then cut in half lengthwise and scoop out the flesh into a bowl.
  4. Mash the potato flesh with butter, spices, cheese, and sour cream until smooth.
  5. Fill each potato skin with the mixture, top with remaining cheese and bacon bits.
  6. Return to the air fryer for another 5-7 minutes until the cheese is melted.
