  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon kosher salt
  • ¾ cup unsalted butter (room temperature)
  • ¾ cup granulated sugar
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • ½ cup whole milk
  • 2 ounces cream cheese (softened)
  • ½ cup granulated sugar
  • 2 cups heavy cream
  • ½ teaspoon vanilla extract
  • 1 pinch kosher salt

Instructions

  1. Prepare the apple filling by cooking diced Granny Smith apples with sugar, lemon juice, cinnamon, and salt until softened. Set aside to cool.
  2. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  3. In one bowl, mix flour, baking powder, cinnamon, nutmeg, and salt. In another bowl, beat butter and sugar until fluffy; add eggs one at a time along with vanilla.
  4. Gradually combine dry ingredients into wet ingredients and gently fold in milk.
  5. Fill each cupcake liner halfway with batter, add a spoonful of cooled apple filling, then cover with more batter.
  6. Bake for 20-25 minutes until a toothpick comes out clean.
  7. For the topping, whip cream cheese and sugar until smooth; fold in whipped cream gently before frosting cooled cupcakes.
