  1. Preheat your oven to 325°F (163°C) and grease two 8 x 4-inch loaf pans.
  2. Grate zucchini until you have two cups and set aside. Dice one medium apple into small pieces.
  3. In a large bowl, combine flour, cinnamon, salt, baking powder, and baking soda.
  4. In another bowl, whisk together eggs, oil (or applesauce), vanilla extract, white sugar, and brown sugar until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
