  • 60 saltine crackers
  • ½ cup unsalted butter (softened)
  • 3 tablespoons sugar
  • 14 oz. sweetened condensed milk
  • 4 egg yolks
  • ½ cup lemon juice
  • Fresh whipped cream (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Crush the saltine crackers finely and mix with sugar and softened butter until combined. Press into an 8-inch pie pan and chill for 15 minutes.
  3. Bake the crust for about 18 minutes until lightly golden and let cool.
  4. In a bowl, beat together egg yolks, sweetened condensed milk, and lemon juice until smooth.
  5. Pour the filling into the cooled crust and bake for another 16 minutes until set.
  6. Allow to cool completely before slicing and serve chilled topped with fresh whipped cream.
