  • 1 rack baby back pork ribs (about 2 pounds)
  • 1 tablespoon smoked paprika
  • 1/2 tablespoon chili powder
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon brown sugar
  • 1 teaspoon salt
  • 1/3 cup (79ml) Bourbon (can be omitted if you prefer)
  • 3/4 cup (200g) Ketchup
  • 2 tablespoon dark brown sugar (light ok too – or maple syrup)
  • 2 tablespoon apple cider vinegar
  • 3/4 tablespoon onion powder
  • 3/4 teaspoon garlic powder (or 1 minced garlic clove)
  • 3/4 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup diced fresh peaches (about 4 small peaches)

Instructions

  1. Preheat your oven to 300°F (149°C).
  2. Combine rub ingredients in a bowl and apply generously on rib surfaces.
  3. Prepare the ribs by rinsing and drying them; remove the silver skin and cut them in half.
  4. Wrap each half in aluminum foil and place in a baking pan; cover tightly with foil.
  5. Bake for about 2-2.5 hours until tender.
  6. While baking, make the BBQ sauce by simmering bourbon with remaining ingredients until thickened.
  7. Preheat your grill to medium-high heat; glaze ribs with sauce and grill for 4-6 minutes until charred.
