  • Olive oil
  • Brown sugar
  • Smoked paprika
  • Dried thyme
  • Dried oregano
  • Garlic powder
  • Kosher salt
  • Chicken drumsticks
  • Butter
  • Yellow onion
  • Garlic cloves
  • Uncooked white rice
  • Low-sodium chicken broth
  • Water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mix olive oil, brown sugar, smoked paprika, dried thyme, oregano, garlic powder, salt, and pepper to create a paste. Coat the chicken drumsticks evenly with this mixture.
  3. Sauté chopped onion in melted butter until softened; add minced garlic and cook briefly.
  4. Combine sautéed onion-garlic mix with uncooked rice in a baking dish and stir well.
  5. Boil chicken broth and water together; pour over the rice mixture.
  6. Place marinated chicken on top of the rice and add lemon wedges. Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 20 minutes until fully cooked.
