  • pounds cod (about 4 fillets)
  • ¾ teaspoon kosher salt
  • Fresh ground black pepper
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 2 tablespoons minced shallot
  • 2 tablespoons minced garlic
  • ½ teaspoon smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the cod fillets dry and season both sides with salt and pepper.
  3. In a bowl, mix lemon juice, zest, olive oil, oregano, shallot, and garlic until combined.
  4. Brush some mixture in the baking dish and place the cod fillets inside. Brush remaining mixture over the cod.
  5. Sprinkle smoked paprika on top and bake for 17-20 minutes or until fish flakes easily at an internal temperature of 130°F (54°C).
  6. Garnish with fresh parsley and serve.
