  • 2 large baking potatoes
  • 1 block (200g) of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 1 head of garlic (top cut off)
  • 1 lemon (quartered)
  • 1 tbsp honey
  • ¼ cup fresh basil (20g)

Instructions

  1. Preheat the oven to 200C (390F).
  2. Wash and cube the potatoes into bite-sized pieces. Par-boil in salted water for 6-8 minutes, then drain and let them steam dry.
  3. Toss the par-boiled potatoes with olive oil, thyme, oregano, salt, pepper, and chili flakes in a baking dish.
  4. Roast for 30-40 minutes until golden brown.
  5. Add the feta cheese to the center of the baking tray and drizzle with lemon juice; roast for an additional 15 minutes.
  6. Mash the roasted garlic and combine it with lemon juice; mix with the potatoes and garnish with fresh basil before serving.
