  • 1 ½ pounds chicken thighs
  • 2 tablespoons honey
  • 3 teaspoons minced garlic
  • 8 ounces baby bella mushrooms
  • 2 cups balsamic vinegar
  • ⅓ cup brown sugar
  • Olive oil, salt, and pepper

Instructions

  1. Preheat the oven to 375°F and grease a rimmed sheet pan.
  2. Toss chicken thighs with olive oil, 2 teaspoons garlic, salt, and pepper until coated.
  3. In a skillet, melt 2 tablespoons butter over medium-high heat; add honey and quickly coat the pan. Brown the chicken thighs for about 1-2 minutes per side.
  4. Transfer the browned chicken to the prepared baking dish.
  5. In a bowl, toss mushrooms with remaining melted butter, garlic, salt, and pepper; add to the baking dish.
  6. Bake for approximately 15 minutes until chicken is cooked through (165°F).
  7. In a saucepan, combine balsamic vinegar and brown sugar; bring to boil then simmer until reduced by half (8-10 minutes). Stir in honey and salt.
  8. Drizzle glaze over chicken and mushrooms before serving.
