Ingredients

  • Brisket
  • Sourdough bread
  • Colby jack cheese
  • Provolone cheese
  • Fried crispy onions
  • Caramelized onions

Instructions

  1. Trim the brisket and apply mustard as a binder; season with your favorite brisket rub. Refrigerate for 1-2 hours.
  2. Smoke the brisket at 210°F using hickory pellets for 9-10 hours until it reaches 165-170°F.
  3. Wrap the brisket in butcher paper with apple cider vinegar and beef tallow; smoke again at 250°F until it reaches 204-206°F.
  4. Allow the brisket to rest wrapped in a cooler for 2-3 hours.
  5. Sauté diced onions in avocado oil and butter until caramelized.
  6. Assemble the melts by layering fried onions, brisket, caramelized onions, BBQ sauce, and cheeses between two slices of sourdough.
