  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)

Instructions

  1. Preheat the oven to 400°F.
  2. Chop sweet potatoes and onion; toss with olive oil, salt, garlic powder, and chipotle powder on a lined baking sheet.
  3. Bake for 20 minutes. Then add chopped broccoli, push sweet potatoes to one side, place chicken on the pan, and brush with BBQ sauce.
  4. Bake for an additional 15-20 minutes until chicken is cooked through.
  5. Shred chicken in a bowl and mix with remaining BBQ sauce; serve immediately with roasted veggies.
