  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 8 corn tortillas
  • 4 cups shredded cheese (cheddar and Monterey Jack)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook ground beef with onion and garlic until browned; drain excess fat.
  3. Stir in enchilada sauce, diced tomatoes, black beans, cumin, chili powder, salt, and pepper; simmer for 5 minutes.
  4. Layer half of the tortillas in the baking dish; add half of the beef mixture and sprinkle with half of the cheese. Repeat with remaining ingredients.
  5. Bake for about 25 minutes until cheese is bubbly and lightly browned. Let it rest before serving.
