  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • ¼ cup apple cider vinegar
  • 1 cup low-sodium beef stock
  • Spices: garam masala, cumin, paprika, turmeric, ground mustard, cayenne pepper (optional), ground ginger, cinnamon

Instructions

  1. Cut beef into 2-inch cubes and season with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat; brown the beef on all sides. Remove and set aside.
  3. In the same skillet, cook onions until caramelized. Add garlic and cook for another two minutes.
  4. Stir in spices and tomato paste; cook briefly until fragrant.
  5. Deglaze with apple cider vinegar and add beef stock; return beef to the skillet.
  6. Bring to a boil, then reduce heat to simmer for about 60 minutes until tender.
