- 1 pound strawberries, trimmed and chopped
- 2 cups blueberries
- 1/4 cup unsweetened coconut water
- 8 ounces canned unsweetened full-fat coconut milk
- Optional: Pure maple syrup for sweetness
- Puree strawberries in a blender until smooth, adding coconut water to thin if needed. Sweeten with maple syrup if desired.
- Repeat with blueberries using the same method.
- In a bowl, mix coconut milk with maple syrup until smooth.
- Fill popsicle molds with strawberry mixture (about one-third full) and freeze for 10 minutes.
- Pour in the coconut layer, freeze for another 10 minutes.
- Top with blueberry puree and insert sticks; freeze overnight or at least 8 hours until solid.
- To serve, dip molds in warm water for easy release.
