Ingredients

  • 1 pound strawberries, trimmed and chopped
  • 2 cups blueberries
  • 1/4 cup unsweetened coconut water
  • 8 ounces canned unsweetened full-fat coconut milk
  • Optional: Pure maple syrup for sweetness

Instructions

  1. Puree strawberries in a blender until smooth, adding coconut water to thin if needed. Sweeten with maple syrup if desired.
  2. Repeat with blueberries using the same method.
  3. In a bowl, mix coconut milk with maple syrup until smooth.
  4. Fill popsicle molds with strawberry mixture (about one-third full) and freeze for 10 minutes.
  5. Pour in the coconut layer, freeze for another 10 minutes.
  6. Top with blueberry puree and insert sticks; freeze overnight or at least 8 hours until solid.
  7. To serve, dip molds in warm water for easy release.
