  • 4 egg yolks
  • 3/4 cup sugar

  • 1 1/2 cup heavy cream (or 4 egg whites)
  • ~30 ladyfingers
  • 1 1/2 cup strong black coffee
  • 2 tbsp cocoa powder

Instructions

  1. Brew strong black coffee and let it cool.
  2. In a bowl, whisk together egg yolks and sugar until creamy. Mix in vanilla and mascarpone until smooth.
  3. In another bowl, whip heavy cream (or egg whites) until stiff peaks form. Gently fold into the mascarpone mixture.
  4. Dip each ladyfinger briefly into the cooled coffee and layer half in a baking dish.
  5. Spread half of the cream mixture over the ladyfingers and repeat with remaining ingredients.
  6. Cover and refrigerate for at least 4 hours or overnight. Dust with cocoa powder before serving.
