  • 3/4 cup all-purpose flour
  • 3/4 cup cake flour
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 10 oz peanut butter chips

Instructions

  1. Preheat the oven to 375°F and line two cookie sheets with parchment paper.
  2. In a bowl, whisk together the all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt. Set aside.
  3. In a stand mixer, cream the cold cubed butter with brown and granulated sugar until smooth. Add peanut butter and mix well.

  5. Gradually add the dry ingredients until fully mixed. Fold in peanut butter chips.
