  • 1 tsp olive oil
  • ⅓ cup white onion, chopped
  • 1 jalapeño, finely chopped
  • 2 15 oz black beans, drained and rinsed
  • ¾ cup tomato, chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp salt
  • 2 Tbsp hot sauce
  • 6 large tortillas (burrito size)
  • 6 tostad
  • 6 small fajita size tortillas (to close the wrap)
  • ⅓ cup sour cream
  • 1½ cup cheese, shredded
  • 1½ cup romaine, shredded
  • ½ cup salsa (optional)
  • 1 avocado, sliced thin (optional)
  • 2 Tbsp cilantro, chopped

Instructions

  1. In a skillet over medium heat, warm olive oil. Sauté chopped onion until translucent, then add jalapeño, garlic powder, chili powder, paprika, cumin, salt, hot sauce, tomatoes, and black beans. Simmer for a few minutes.
  2. Assemble by placing a burrito-sized tortilla on a cutting board. Add the bean mixture in the center along with cheese, sour cream, romaine lettuce, and optional avocado slices. Top with a tostada.
  3. Fold the burrito tortilla around the tostada to enclose everything securely.
  4. Cook in a heated skillet for 3 minutes on each side until golden brown.
