  • 1 cup unsalted butter (melted)
  • 1 cup granulated sugar (divided)
  • 2 cups all-purpose flour (divided)
  • 8 ounces cream cheese (softened)
  • 2 large eggs
  • 3 cups blueberries (fresh or frozen)
  • Zest and juice of 2 lemons

Instructions

  1. Preheat your oven to 350ºF (177ºC) and line an 8"x8" baking pan with foil.
  2. In a mixing bowl, combine melted butter, ½ cup sugar, vanilla extract, salt, lemon zest, and 2 cups flour until crumbly. Press into the prepared pan.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add the remaining sugar and mix in eggs one at a time, followed by yogurt, lemon juice, salt, and remaining flour until smooth.
  4. Pour the filling over the crust in the baking pan and top with blueberries.
  5. Bake for about 60 minutes until set but slightly jiggly in the center. Let cool completely before slicing.
