  • 1 recipe blueberry pie filling (about 3 cups)
  • 3 uncooked 9-inch pie crusts
  • 1½ cups fresh blueberries
  • ½ cup powdered sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla paste
  • Zest and juice of 1 lemon
  • 1 teaspoon ground cinnamon
  • 1 egg (for egg wash)
  • Coarse sugar for sprinkling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix blueberries, powdered sugar, cornstarch, vanilla paste, lemon zest and juice, and cinnamon. Let sit for 10 minutes.
  3. Roll out two pie crusts into rectangles and place one on a baking sheet.
  4. Pour blueberry filling over the bottom crust.
  5. Roll out the third crust into strips to create a lattice top over the filling.
  6. Brush the lattice with an egg wash (whisked egg and water) and sprinkle coarse sugar on top.
  7. Bake for about 30 minutes until golden brown; cool before slicing.
