  • 1/2 lb salt pork (or diced bacon)
  • 2/3 cup molasses
  • 1/4 cup brown sugar
  • 1 large yellow onion, diced
  • Kosher salt
  • Dijon mustard
  • black pepper

Instructions

  1. Soak beans overnight in cold water with kosher salt.
  2. Simmer soaked beans for 30-45 minutes until tender; drain but reserve liquid.
  3. Preheat the oven to 250°F (120°C).
  4. Score and sear the salt pork in a Dutch oven until golden brown; place it at the bottom of the pot.
  5. Layer drained beans and diced onion over the salt pork.
  6. Mix molasses, brown sugar, mustard, salt, and pepper in a bowl; pour over beans. Add reserved liquid until just covered.
  7. Cover and bake for 6-8 hours, checking hourly and adding water if necessary.
