  • 8 ounces imitation crab
  • 1 cup cucumber (sliced)
  • 1 avocado (diced)
  • 1 small carrot (grated)
  • ¼ cup mayonnaise
  • 1 tablespoon sriracha sauce
  • Nori sheets and sesame seeds for garnish

Instructions

  1. Rinse sushi rice under cool water until clear, then drain.
  2. Cook rice in a saucepan with water: bring to boil, cover and simmer on low for 15 minutes. Let sit off heat for another 5 minutes.
  3. Prepare seasoning by mixing rice vinegar, sugar, and salt until dissolved. Stir into cooled rice gently.
  4. Mix mayonnaise and sriracha in a small bowl.
  5. Assemble bowls with seasoned rice, imitation crab, cucumber, avocado, carrot, nori, and drizzle with spicy mayo.
