  • 1 pound ground beef
  • 1 pound ground pork
  • 1 cup ricotta cheese
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • Pork rind crumbs for coating
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons minced garlic
  • Optional: 1/4 teaspoon paprika
  • Optional: Fresh basil, for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish.
  2. In a mixing bowl, combine ground beef, ground pork, egg, ricotta cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Shape into small meatballs and coat each in pork rind crumbs.
  4. Arrange the meatballs in the baking dish and bake for about 20 minutes until browned.
  5. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant. Add heavy cream, season with salt and pepper (and paprika if desired), then stir in Parmesan until melted.
  6. Toss baked meatballs in the sauce until fully coated.
