  • 4 large eggs

  • 1 container (16 oz) cream cheese frosting
  • 16 oz Ghirardelli white chocolate melting wafers

  2. In a stand mixer, combine sugar, canola oil, and eggs until mixed. Add flour, baking soda, baking powder, salt, and cinnamon; mix until just combined. Fold in carrots and pecans.
  3. Bake for 30–40 minutes until a toothpick comes out clean. Cool completely.
  4. Crumble the cake into fine crumbs. Mix in cream cheese frosting until dough forms.
  5. Roll mixture into balls and refrigerate for an hour.
  6. Melt white chocolate using a double boiler. Dip each truffle in chocolate and sprinkle with pecans immediately after dipping.
