  • 1 cup light brown sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shredded carrots
  • 4 ounces cream cheese
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 3/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 baking pan with non-stick spray or parchment paper.
  2. In a mixing bowl, whisk together melted butter and brown sugar until smooth. Add egg and vanilla; mix well.
  3. In another bowl, combine flour, cinnamon, baking powder, and salt. Gradually mix into wet ingredients until just combined.
  4. Fold in shredded carrots gently using a rubber spatula.
  5. Pour batter into the prepared pan and level it out. Bake for about 40 minutes or until a toothpick comes out clean.
  6. While baking, prepare the cream cheese layer by mixing cream cheese with granulated sugar, egg yolk, and vanilla until smooth.
  7. Once bars are baked, spread the cream cheese mixture over the top and return to the oven for another 10–15 minutes.
  8. Allow bars to cool completely before cutting into squares.
