  • 8 oz brick cream cheese
  • 8 Tbsp butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 375°F and line a jelly roll pan with parchment paper.
  2. In one bowl, whisk together the flour, baking powder, baking soda, salt, and spices. In another bowl, beat the eggs and mix in sugar, oil, and vanilla.
  3. Gradually combine the dry ingredients with the wet mixture and fold in shredded carrots.
  4. Spread batter evenly in the prepared pan and bake for 10-13 minutes until springy.
  5. Roll the cake while warm in the parchment paper and let it cool.
  6. For frosting, beat cream cheese and butter until smooth; mix in powdered sugar and vanilla.
  7. Unroll the cooled cake, spread frosting evenly (leave one inch unfrosted), re-roll tightly, wrap in plastic wrap, and chill before slicing.
