  • 1 large head cauliflower, chopped into florets
  • 1 (15-oz) can chickpeas, rinsed and drained
  • 3 Tbsp extra-virgin olive oil
  • 2 cups cooked white basmati rice (or grain of choice)
  • 1 Tbsp curry powder
  • 2 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup tahini
  • 2 Tbsp fresh lemon juice
  • 1/2 tsp minced fresh garlic
  • 1/4 tsp ground cumin
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine spices. Toss cauliflower with 2 Tbsp olive oil and coat well. On another baking sheet, coat chickpeas with the remaining olive oil and sprinkle with spice mixture.
  3. Roast both sheets for 30 minutes; shake chickpeas halfway through. Remove chickpeas after 30 minutes and let cauliflower roast an additional 5–10 minutes until charred.
  4. While roasting, prepare the Green Tahini Sauce by blending all ingredients with warm water until smooth.
  5. In serving bowls, layer cooked rice followed by roasted cauliflower and chickpeas. Top with sauce and optional fresh toppings.
