  • 1 head cauliflower, chopped into florets
  • 2 slices bacon, chopped
  • 1 tablespoon olive oil
  • ¼ cup yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup almond milk (or milk of choice)
  • 2 tablespoons all-purpose flour (or tapioca flour for gluten-free)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded parmesan cheese
  • ½ teaspoon salt
  • 2 tablespoons chives, chopped
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a deep skillet over medium heat, cook bacon until crispy. Remove and set aside.
  3. Boil cauliflower florets in water for 5 minutes; drain.
  4. In the same skillet with reserved grease, sauté onion and garlic until soft.
  5. Whisk almond milk and flour in a bowl; add to skillet and bring to a low boil.
  6. Stir in cheddar, parmesan, and salt until smooth.
  7. Combine cauliflower with cheese sauce; transfer to an 8×8 baking dish and top with bacon.
  8. Bake for 20 minutes until bubbly and golden brown. Garnish with chives before serving.
