  • 1 pound chicken breast, cut into bite-sized pieces
  • 10 ounces penne pasta (uncooked)
  • 2½ cups low sodium chicken broth
  • 1 cup milk
  • 8 ounces fresh spinach
  • 3 ounces cream cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. In a large skillet or Dutch oven, heat olive oil over medium heat. Sauté the chopped onion until translucent (3–4 minutes).
  2. Add chicken, season with salt and pepper, and cook until browned (5–6 minutes). Stir in minced garlic and sauté for an additional minute.
  3. Add uncooked penne pasta, chicken broth, and milk. Bring to a boil, then reduce heat, cover, and simmer until pasta is tender (15–20 minutes).
  4. If excess liquid remains after cooking, uncover and simmer for another 5 minutes.
  5. Remove from heat and stir in cream cheese until melted. Mix in spinach, mozzarella, and Parmesan cheese until fully melted.
