  • 1/4 cup butter
  • 1 medium onion
  • 810 cloves garlic
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup chicken broth
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 3/4 cup Parmesan cheese, grated
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Scrub and slice potatoes into 1/8-inch rounds using a mandoline or knife; set aside.
  3. In a saucepan, melt butter over medium heat; sauté diced onion and minced garlic until soft. Stir in flour to form a roux, then gradually add milk and chicken broth until thickened. Mix in dried thyme, salt, and cheeses until well combined.
  4. Grease a casserole dish and layer potatoes with cheese sauce three times; finish with remaining sauce on top.
  5. Cover with foil and bake for 30 minutes; remove foil and bake for an additional 35–45 minutes until golden brown and fork-tender.
