  • 1 yellow onion, finely diced
  • 4 pounds russet potatoes, peeled and sliced
  • 2 cups grated cheddar cheese
  • 1 can condensed cheddar soup (10.75 ounces)
  • 1 can evaporated milk (12 ounces)
  • ½ cup milk
  • Garlic powder, salt, and pepper

Instructions

  1. Preheat oven to 350°F (177°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium-high heat, brown the ground beef with onions; drain excess fat.
  3. Layer half of the sliced potatoes in the baking dish; season with salt and pepper.
  4. Add half of the cooked beef and a quarter of the cheese; repeat layers two more times.
  5. In a bowl, whisk together soup, evaporated milk, regular milk, and garlic powder; pour over casserole.
  6. Cover tightly with foil and bake for 60 minutes; remove foil and bake an additional 15 minutes until golden.
