  • 1/2 cup canned pumpkin puree
  • 1 3/4 cups all-purpose flour
  • 1 tbsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup granulated white sugar
  • 1/2 tsp pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, combine granulated white sugar with pumpkin pie spice. Mix well and set aside for later use.
  3. In a mixing bowl, add softened unsalted butter and light brown sugar. Use an electric mixer to beat them together until light and fluffy. This should take about 3-5 minutes.
  4. Add egg yolks and vanilla extract to the butter mixture. Beat until fully combined.
  5. Slowly incorporate canned pumpkin puree into the mixture. Mix until smooth.
  6. In another bowl, whisk together all-purpose flour, baking soda, baking powder, salt, and remaining pumpkin pie spice. Gradually add this dry mixture to the wet ingredients while mixing until just combined.
  7. Scoop tablespoon-sized amounts of dough onto a prepared baking sheet lined with parchment paper. Space them apart as they will spread while baking.
  8. Sprinkle the tops of each cookie with the prepared spiced sugar coating before placing them in the oven.
  9. Bake in preheated oven for about 12 minutes or until edges are lightly golden but centers remain soft.
  10. Let cookies cool on the baking sheet for several minutes before transferring them to wire racks to cool completely.
