  • 2 tbsp butter
  • 2 boneless, skinless chicken breasts (or 2 cups diced rotisserie chicken)
  • 2½ cups chicken broth
  • 1¼ cups white long-grain rice (uncooked)
  • 2 cups fresh or frozen broccoli florets
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup crushed Ritz crackers, mixed with 2 tbsp melted butter for topping

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large pot, melt butter over medium heat; add chicken and cook until golden brown. Set aside.
  3. In the same pot, combine chicken broth, olive oil, and rice. Bring to a boil, then reduce heat and cover for 6 minutes.
  4. Add broccoli; cover and cook for an additional 9 minutes until rice is tender.
  5. Stir in cooked chicken (or rotisserie), cream of chicken soup, milk, sour cream, and half the cheddar cheese.
  6. Transfer mixture to a greased casserole dish and top with remaining cheese. Cover with foil and bake for 15 minutes.
  7. Remove foil, sprinkle with Ritz cracker mixture, and bake uncovered for another 10 minutes until golden brown.
