  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning
  • 3 boneless, skinless chicken breasts (cut into strips)
  • 1 medium red bell pepper (sliced)
  • 1 medium green bell pepper (sliced)
  • 2 large onions (sliced)
  • 2 tablespoons butter
  • 1 cup Tex-Mex cheese or cheddar cheese
  • 8 tortillas

Instructions

  1. Season the chicken strips with fajita seasoning.
  2. Heat olive oil in a large skillet over medium heat and cook the chicken for 5-10 minutes until fully cooked. Remove from skillet.
  3. In the same skillet, sauté onions and bell peppers until tender. Return the chicken and mix well.
  4. Preheat another skillet over medium heat, melt butter, and place one tortilla in it.
  5. On half of the tortilla, add the chicken mixture and cheese; fold or cover with another tortilla.
  6. Cook until golden brown on both sides and cheese melts.
  7. Repeat with remaining tortillas and filling, then serve hot.
