  • 1/3 cup all-purpose flour
  • 8 ounces thinly sliced mushrooms
  • 1 can (18 ounces) cream of mushroom soup
  • 6 slices Swiss or Muenster cheese
  • 1/2 cup sherry wine
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 350°F (177°C). Grease a 9×13-inch baking dish.
  2. Season chicken with salt and pepper; dredge in flour.
  3. Brown chicken in olive oil over medium heat; set aside.
  4. Sauté mushrooms in butter until golden; deglaze with sherry.
  5. Mix in cream of mushroom soup until warmed.
  6. Arrange chicken in the baking dish; pour sauce over top and add cheese slices.
