  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 stick butter
  • 2 tablespoons minced garlic (about 6 cloves)
  • ¼ teaspoon red pepper flakes
  • 1 ½ teaspoons salt, divided
  • ½ cup dry white wine
  • 12 tablespoons fresh lemon juice
  • 1 ½ cups uncooked white rice (jasmine or long-grain)
  • 3 cups chicken broth
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons crispy toasted breadcrumbs (optional)

Instructions

  1. Season chicken strips with salt, lemon pepper seasoning, and garlic powder. Heat olive oil in a large skillet over medium heat and sauté chicken until golden brown, about 3-4 minutes per side. Set aside.
  2. In the same skillet, melt butter and sauté minced garlic, red pepper flakes, and salt until fragrant. Add white wine and reduce by half. Stir in lemon juice.
  3. Add uncooked rice and chicken broth; bring to a boil. Cover and simmer for 15-20 minutes until rice is tender.
  4. Stir in Parmesan cheese until melted. Return chicken to skillet, drizzle with reserved sauce, cover for 5 minutes to meld flavors.
  5. Garnish with parsley and serve immediately.
