  • 1 large zucchini
  • ½ yellow onion
  • 1 pint grape tomatoes
  • 1.5 cups basmati or long-grain rice
  • 3 cups chicken stock
  • ¼ cup crumbled feta cheese
  • Tzatziki sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine smoked paprika, seasoning salt, turmeric, and cayenne pepper.
  3. In another bowl, mix red wine vinegar, sugar, and salt; microwave until dissolved. Add thinly sliced red onions and refrigerate.
  4. In a 9×13-inch casserole dish, layer diced chicken sprinkled with half the paprika mixture and Greek seasoning.
  5. Pour uncooked rice over the chicken followed by zucchini and tomatoes.
  6. Whisk together chicken stock with remaining spices and pour over casserole.
  7. Top with feta cheese and lemon wedges.
  8. Cover with foil and bake for 40 minutes; uncover and bake an additional 10-20 minutes until rice is tender.
