  • 1 lb Ground Beef
  • 1 medium Onion (diced)
  • 14.5 oz Diced Tomatoes (canned, undrained)
  • 16 oz Elbow Macaroni
  • 2 cups Cheddar Cheese (shredded, divided)
  • 2 Tbsp Taco Seasoning

Instructions

  1. Cook elbow macaroni in boiling water until al dente; drain and set aside.
  2. In a large skillet over medium heat, brown ground beef with diced onion until no longer pink; drain excess fat.
  3. Stir in diced tomatoes, water, and taco seasoning; simmer for 5 minutes.
  4. Combine meat mixture with cooked macaroni and mix well.
  5. In a greased 13×9 baking pan, layer half of the mixture, sprinkle with 1 cup cheese, then top with remaining mixture.
  6. Cover with foil and bake at 350°F for 30 minutes. Remove foil, add remaining cheese, and bake uncovered for an additional 10 minutes.
