  • 45 pounds bone-in chicken thighs (or breasts)
  • ⅓ cup olive oil
  • ½ cup orange juice
  • ¼ cup fresh lime juice
  • 3 cloves garlic, diced
  • 2 ounces achiote paste
  • 1 tablespoon ground cumin
  • 1 tablespoon kosher salt
  • 1 tablespoon ground coriander
  • 2 teaspoons smoked paprika
  • 2 teaspoons dried oregano
  • 1 teaspoon chipotle chile pepper

Instructions

  1. In a blender, combine olive oil, orange juice, lime juice, cilantro, onion, garlic, achiote paste, and spices. Blend until smooth.
  2. Place chicken in a ziplock bag or airtight container and pour the marinade over it. Mix until well-coated.
  3. Marinate in the refrigerator for 4 to 24 hours.
  4. Preheat grill to medium-high heat (425-450°F). Grill chicken for 5-7 minutes per side until fully cooked (internal temperature should reach 165°F for breasts and 175°F for thighs).
  5. Let rest for 5 minutes before slicing and serve with desired sides.
