  • 1/2 cup heavy cream (or coconut milk)
  • Optional: 1/4 tsp pure vanilla extract
  • Optional: Pinch of salt

Instructions

  1. Finely chop the chocolate and place it in a heatproof bowl.
  2. Heat the cream (or coconut milk) in a saucepan until it just begins to simmer.
  3. Pour the hot cream over the chopped chocolate and add vanilla extract and salt if using. Stir until smooth.
  4. Chill the mixture in the refrigerator for at least 2 hours until firm enough to scoop.
  5. Use your hands or a mini cookie scoop to form small balls, rolling them smooth between your palms.
  6. Roll truffles in cocoa powder, nuts, or other toppings if desired.
  7. Place on parchment paper and refrigerate until ready to serve.
