Churro Cookies are a delightful fusion of the classic churro and a soft, chewy cookie. These treats are rolled in a cinnamon sugar coating and topped with rich buttercream frosting, making them an irresistible indulgence for any gathering or sweet craving.

  • 1/2 cup shortening
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon cinnamon (for cookies)
  • 3/4 cup unsalted butter (for frosting)
  • 3 cups confectioners' sugar
  • 1/3 cup light brown sugar

Instructions

  1. Preheat the oven to 325°F (163°C) and line baking sheets with parchment paper.
  2. In a bowl, mix granulated sugar and cinnamon for coating; set aside.
  3. Cream together butter, shortening, sugar, eggs, and vanilla until light. Gradually mix in flour, cornstarch, salt, baking powder, and cinnamon until combined.
  4. Portion dough into balls and roll in the cinnamon sugar mixture before placing on baking sheets.
  5. Bake for 12-14 minutes until lightly golden; cool completely before frosting.
  6. For the buttercream, beat unsalted butter with confectioners' sugar, brown sugar, and cinnamon until fluffy. Add milk as needed for consistency.
