  • 5.2 oz dry noodles (of choice)
  • 1/2 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1/2 small shallot (or red onion), finely chopped
  • 1 tbsp sugar
  • 1 tsp curry powder
  • 1/2 tbsp chili powder (optional)
  • 1/4 cup olive oil
  • 1.5 to 2 tbsp vegetarian mushroom oyster sauce
  • 1 tbsp dark soy sauce
  • Juice from 1 lime (about 2 tbsp)

Instructions

  1. Cook the noodles according to package instructions until slightly undercooked; rinse in cold water and set aside.
  2. In a heatproof bowl, combine cilantro, garlic, shallot, curry powder, sugar, and chili powder (if using).
  3. Heat olive oil in the same pot over medium heat until hot; pour over the cilantro mixture and mix well.
  4. Stir in vegetarian mushroom oyster sauce, dark soy sauce, and lime juice.
  5. Add the cooked noodles to the bowl; toss until evenly coated with the sauce.
  6. Adjust seasoning as needed; serve hot.
