  • 3 overripe bananas
  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 1/2 cup all-purpose flour (regular or gluten-free)
  • 1 cup rolled oats
  • Cinnamon swirl: 4 tbsp melted vegan butter
  • 1/3 cup light brown sugar
  • 2 tbsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash bananas and mix with melted vegan butter, maple syrup, almond milk, and vanilla extract.
  3. In another bowl, whisk together baking powder, baking soda, cinnamon, salt, flour, and oats. Gradually combine the dry ingredients with the wet mixture until just mixed.
  4. In a small bowl, combine melted vegan butter with brown sugar and cinnamon for the swirl.
  5. Pour half of the batter into a greased loaf pan. Add half of the cinnamon mixture on top and layer remaining batter followed by the rest of the swirl mixture. Swirl gently with a knife.
  6. Bake for about 45 minutes or until a toothpick comes out clean.
