  • 1 tablespoon maple syrup (or honey)
  • 1 egg
  • 180 ml (3/4 cup) egg whites
  • 80 grams (1/3 cup) Greek yogurt
  • 1 teaspoon granular sweetener (erythritol)
  • 1/3 teaspoon ground cinnamon
  • Preferred milk (optional, to thin the filling)
  • 1 teaspoon granular sweetener (erythritol) for topping
  • 1/3 teaspoon ground cinnamon for topping

Instructions

  1. In a mixing bowl, whisk together oat flour, maple syrup (or honey), egg, and egg whites until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease it. Pour about 1/3 cup batter into the skillet, swirling to spread evenly. Cook for 1–2 minutes until edges lift; flip and cook for another minute.
  3. In a small bowl, mix Greek yogurt with sweetener and cinnamon until smooth; add milk if needed to thin.
  4. Spread the filling on each crepe and roll them up gently.
  5. Mix together additional erythritol and cinnamon for topping; sprinkle over rolled crepes before serving.
