  • ⅓ cup olive oil
  • 1 red bell pepper (sliced)
  • 1 serrano pepper (or 2 jalapenos, sliced)
  • ½ cup chopped cilantro
  • 2 carrots (sliced)
  • 1 russet potato (optional, sliced)
  • 6 garlic cloves (halved)
  • 1 tablespoon tomato paste
  • Water (¾ to 1 cup)

Instructions

  1. Heat olive oil in a large sauté pan over medium heat.
  2. Add red bell pepper, serrano pepper, carrots, potato (if using), and garlic; sauté for 2-3 minutes.
  3. Stir in sweet paprika, hot paprika, salt, cumin, turmeric, and tomato paste; cook for another 2-3 minutes.
  4. Add half the cilantro and water; cover and simmer for 12-15 minutes until vegetables are tender.
  5. Season the salmon fillets lightly with salt; place them in the pan ensuring they are coated by the sauce. Add more water if necessary.
  6. Cover and cook on low flame for 20-25 minutes; spoon sauce over fish halfway through cooking.
  7. Garnish with lemon slices before serving.
