  • 1 lb chicken breasts
  • 7 oz full-fat coconut milk
  • 1 cup chicken stock
  • ½ cup red onion
  • 2 garlic cloves
  • 1 tablespoon ginger
  • Juice of 1 lime
  • Seasonings (red pepper flakes, salt, black pepper)
  • 1 tablespoon arrowroot powder

Instructions

  1. Season chicken with salt and pepper. In a skillet, heat 1 tablespoon coconut oil over medium-high heat. Cook chicken until golden brown on both sides; set aside.
  2. In the same skillet, add remaining coconut oil and sauté onion until soft. Add garlic and ginger; cook for an additional minute.
  3. Stir in chicken stock, lime juice, seasonings, and bring to a boil. Reduce to a simmer for about 5 minutes.
  4. Incorporate coconut milk and simmer for another 5 minutes. Mix arrowroot powder with water and stir into the sauce; return to simmer until thickened.
  5. Add chicken back into the pan; cook until fully heated through. Serve garnished with lime slices and cilantro.
