  • 9 large eggs
  • 1/3 cup feta cheese
  • 1 cup baby spinach
  • 1/2 cup sundried tomatoes (cut into strips)
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground pepper
  • 1 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/3 cup grated cheddar cheese (or mozzarella)

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a pie plate skillet.
  2. Roughly chop the spinach and set aside.
  3. In a mixing bowl, whisk together eggs, cottage cheese, feta, salt, pepper, garlic powder, oregano, and cheddar until well blended.
  4. Gently fold in the chopped spinach and sundried tomatoes.
  5. Pour the mixture into the prepared pie plate skillet and spread evenly.
