  • 1 1/2 cups graham cracker crumbs
  • 4 (8 oz each) blocks cream cheese, softened
  • 1 cup granulated sugar (divided)
  • 1 cup sour cream
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cotton candy (torn into small pieces)
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 cup all-purpose flour
  • 2 tablespoons powdered sugar
  • Additional cotton candy for garnish

Instructions

  1. Preheat your oven to 325°F (163°C). Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press into the bottom of a springform pan and bake for 10 minutes. Cool completely.
  2. Beat softened cream cheese until smooth; add remaining sugar and mix well. Incorporate sour cream and flour until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and cotton candy.
  3. Pour the filling over the cooled crust and bake for 60-70 minutes until set but slightly jiggly in the center. Turn off the oven and let it cool for an hour before refrigerating for at least 4 hours or overnight.
  4. Whip heavy cream with powdered sugar until stiff peaks form; top cheesecake with whipped cream and garnish with additional cotton candy before serving.
