  • ¼ cup ghee or butter
  • 1 tablespoon olive oil
  • 1 pound Yukon gold potatoes, cubed
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 1 ¼ pounds sirloin steak, cubed
  • Fresh parsley for garnish

Instructions

  1. Heat a cast iron skillet over medium heat and add olive oil and 2 tablespoons of ghee.
  2. Add cubed potatoes, garlic, thyme, salt, and pepper. Cook for about 10 minutes until golden brown and fork-tender. Remove from the skillet.
  3. Increase heat to medium-high and add the remaining ghee. Sear the steak cubes for about 4 minutes until browned.
  4. Return the potatoes to the skillet, mix well, and adjust seasoning if needed.
